Geraldine's World
Executive Chef
Every great recipe has a beginning, and Geraldine's started in a classroom. Her Junior Secondary School principal, Quinette Chand, quickly realised that Geraldine's lively spirit and boundless energy needed a place to shine. She suggested food and nutrition, thinking the kitchen would be the perfect outlet for all that creativity. As it turned out, it was one of the best pieces of advice Geraldine ever received.
A Passion Begins
At Chaguanas Secondary School, Geraldine discovered a love for baking. Bread, cakes, cookies, and simple homemade recipes soon became much more than school projects. She found joy in creating something that could bring comfort. That passion continued through the Civil Hospitality Programme, where two years of training introduced her to the world of professional kitchens, hospitality, and the art of serving others.
By the age of twenty three, Geraldine had already found her place in the restaurant industry. Through hard work, determination, and a natural ability to lead, she became Executive Chef at Baltarzzar, where she created menus and managed her own kitchen team. She later continued her journey at TGI Fridays and Rango's, refining her skills in busy kitchens that demanded consistency, creativity, and excellence every single day.
The Vision of Macaw's
After years of learning, leading, and growing, Geraldine knew she wanted to create something of her own. A place where food was never just about what was on the plate, but about the people gathered around it. That vision became Macaw's, a family business built on genuine hospitality, thoughtfully crafted food, and the belief that life's best moments are shared.
For Geraldine, Macaw's is more than a business. It is a piece of her heart and a legacy she is building for her daughter, Azariah, rooted in love, passion, and the values that have guided her journey. Today, every menu, every celebration, and every guest who walks through Macaw's becomes part of a story that began with one teacher who saw a spark and believed it belonged in the kitchen.
